Our exclusive single-variety Edison™ white wheat flour. Bred specifically for maritime Northwest climates by retired Bellingham professor Merrill Lewis. Sweet and buttery with a lovely golden color. Excellent in sourdough baked goods, pizza dough, and anywhere white wheat flour is desired. Approximate protein is 10.5 - 12.5%.
